Black senbei – Snow crab – Pickled wasabi

Snow crab mixed with Japanese mayo, topped with pickled wasabi. Served on rice senbei infused with octopus ink.

Tempura – Tamarind – Daikon

Keyser tempura served on nest of daikon & beetroot noodles. Topped with a tangy tamarind sauce.

Beef tartare – Oyster leaf – Yummi sauce

Beef tartare with yummy coconut sauce, served on fresh oyster leaf with roasted cashew nuts.

Kinilaw – Tuna – Wonton

Fresh tuna tartare in Filipino inspired kinilaw sauce made with coconut, fresh lime & vinegar. Topped with fresh herbs & crispy wonton noodles.

Keyser bao – Pork – Hoisin

Steamed bao with filling of pork belly caramelized in hoisin sauce. Served with pickled onion & spring onion.

Tom Kha – Chicken – Wonton

Thai soup with coconut, kaffir lime leaves, lemongrass & ginger. Served with homemade wonton with chicken & mushrooms. Topped with chive oil & herbs.

Beef ribs – Keyser's BBQ-sauce – Lemongrass oil

Slow-cooked short ribs with Thai herbs, glazed in Keyser's BBQ-sauce. Topped with fresh spring onion & kaffir lime oil.

Scallop – Unagi – Kataifi

Fried scallop in kataifi pastry with a touch of unagi sauce. Topped with chive, chilli mayo & watercress.

Miang kham – Mango – Shiso

Mango mixed with chilli, lime, coriander & peanuts. The dish is eaten by hand in a fresh shiso leaf.

Beef – Szechuan – Hokkaido

Soy marinated beef with ginger nuoc cham, spring onion & szechuan sauce. Served on hokkaido purée.

Nasi lemak – Pandan – Chilli

Malaysian style “rich rice”, jasmine rice cooked in coconut cream with pandan. Served with garlic/chilli paste & cress.

Kimchi – Tomatoes – Nam Jim

Keyser's kimchi-marinated tomatoes & chilli strings, served alongside smashed cucumber in green Nam Jim-sauce.

Dessert

Crème brûlée – Passionfruit – Cashew

Vietnamese passionfruit crème brûlée served with coconut sorbet & caramelized cashew nuts.
