Carrot – Daikon – Goma

Fresh daikon maki roll with carrot & Nam Jim sauce based on lime juice, chilli, garlic, coriander, palm sugar & fish sauce.

Pork belly – Adobo glaze – Pickled onion

Slow-cooked pork with Filipino Adobo glaze based on garlic, soy sauce & vinegar. Served with pickled onions & fresh chilli.

Kimchi marinated tuna, flambéed & served with butternut squash purée. Topped with kataifi & yuzu-pickled red onions.

Tom-Yam soup – Oyster mushroom – Galanga

Thai soup based on coconut cream, kaffir lime leaves & galanga. Served with oyster mushrooms & fresh chilli.

Beef tartare – Beetroot – Wasabi

Japanese style beef tartare in wasabi vinegar with baked beetroot & spring onion. Topped with salted cashews & daikon cress.

Beef ribs – Asian BBQ sauce – Lemongrass oil

Slow-cooked short ribs with Thai herbs, glazed in BBQ-sauce. Topped with fresh spring onion, lemongrass oil & shiso leaves.

Scallop – Unagi – Kataifi

Fried scallop in kataifi pastry served with Unagi sauce, wasabi cream & watercress.

Miang kham – Fresh mango – Shiso

Seared shrimps with mango, chilli, lime, coriander & peanuts. The dish is served in fresh, green shiso leaves & eaten by hand in one bite.

Orange salad with Nam Jim dressing, Chinese cabbage, fresh chilli & smoked almonds.

Massaman – Chicken – Kaffir lime

Boneless chicken with Thai-Malaysian Massaman curry based on coconut cream & peanuts. Served with zucchini & green beans.

Thai risotto – Coconut – Danish cheese

Jasmine rice steamed in coconut cream & herbs. Served with Danish cheese & crunchy cashew nuts.

Dessert

Lychee – Cherry – White chocolate

White chocolate mousse with lychee gel topped with crispy, dehydrated cherries. Served alongside cherry sorbet topped with caramelized white chocolate.
