Flame grilled ebi served on a crispy senbei cracker with wasabi mayo, fresh herbs & pickled wasabi.

Carrot – Daikon – Nam Jim

Fresh maki roll of carrot & daikon. Served with nam jim sauce based on chilli & coriander.

Korokke – Teriyaki – Bonito

Hand rolled korokke with spicy fish topped with teriyaki sauce. Served with homemade chilli mayo & smoked, fermented tuna.

Kimchi marinated tuna, flambeed & served with butternut squash purée. Topped with kataifi & Japanese, yuzu-pickled red onions.

Steamed bao filled with hoisin-caramelized duck confit. Served with chilli-pickled cucumber, crunchy spring onion & spicy mayo.

Green curry – Oyster mushroom – Basil

Thai green curry soup based on coconut cream, basil, green chilli & galanga. Served with oyster mushrooms.

Slow-cooked short ribs with Thai herbs, glazed in Keyser's BBQ-sauce. Topped with fresh spring onion & kaffir lime oil.

Joe's dumplings with scallop & shrimp. Served with Asain-inspired lobster bisque, herbs & fried, crispy leeks.

Charred romaine – Wasabi – Mango

Caramelized salad served with mango chilli compote, wasabi dressing, cashew crumble & fresh, Asian herbs.

Massaman – Lamb – Kaffir lime

Slow-cooked lamb, zucchini & fresh herbs. Served with Thai-Malaysian massaman curry based on coconut cream & peanuts.

Thai risotto – Coconut – Aged hard cheese

Jasmine rice steamed in coconut cream & herbs. Served with aromatic herb oil, aged hard cheese & crunchy cashew nuts.

Tempura – Broccolini – Umeboshi

Tempura-fried broccolini served with a savory umeboshi mayo & fresh shiso.

Dessert

Miso – Passionfruit – Lotus root

White chocolate & miso mousse. Served alongside passionfruit sorbet & broken gel made from yuzu with fresh Thai basil. Topped with caramelized honey & crispy lotus root.
